Back again.

It may have been quite a while since you have had the glorious opportunity to read my whimsical muses on this lovely blog. I have been in the middle of moving and various other life happenings. I now have a new kitchen and a new place, but still no grill. No matter, lets move on to tonight's dish, something a little more basic. This delicious meal of steak and balsamic vinaigrette dressing with spinach salad.  This will serve about two people, As always the shopping list is as follows;

Sirloin Steak (about 1 lb)
Fresh Spinach Leaf (enough for two salads, roughly 2 cups)
Olive Oil (2/3 cup)
Balsamic Vinegar (1/4 cup)
Oregano (to taste)
Thyme (to taste)
Salt and Pepper (1/2 tsp each, and to taste)
Garlic Powder (2 tsp)
*Brown Sugar (2 tsp)
Veg. Oil (2tbs)
Bowl
Large seal-able bag (sandwich bag)
Tongs
Whisk
Meat Knife
Pan
Skillet
*Optional

Since I don't have a BBQ pit (damn you apartments), what we will do is a kitchen version of a grill. Set the stove top to med-high heat, take the vegetable oil and pour it in the skillet setting it on the heat. Take the salt and pepper and sprinkle it over the room temperature steaks as well as a dash of thyme and oregano. Now that the oil is hot set the oven to 450 deg to pre-heat it for the steaks. Take the steaks and gently set them in the oil for about two minutes per side to get a nice sear. Next set the steaks in the pan and into the oven for about 10-12 minutes for a nice medium. While the delicious steak is doing its magic in the oven lets move onto the vinaigrette.

Grab the bowl, whisk, vinegar, olive oil, salt, pepper, garlic and brown sugar (optional). Pour in the vinegar with the salt, pepper (1/2 tsp each or to taste), garlic, and the brown sugar. Whisk this mixture so that everything is dissolved into the vinegar. Once it looks smooth and lump free slowly mix in the oil while whisking. One it is well mixed give it a quick taste and season as needed. The vinaigrette taste great so throw that spinach into the large sandwich bag with the dressing and give it a good shake.

By now the steak should be done so pull it out and let it sit for about four minutes to distribute all the juices evenly throughout the cut. Now slice the steak into small portions and place on top of the salad on a plate and enjoy a meal that would have cost you 40$ at least, at a restaurant for fractions of the cost. Don't forget a nice red wine to go with this and possibly a few candles because this meal is oh so sexy. Enjoy the pictures, it feels good to be back.

<link rel='alternate' type='text/html' href='http://alwaystastyneverstale.blogspot.com/2010/11/guess-whos-back-back-again.html' title='Guess who's back. I love me some good old baked Zitti but rarely make this delicious dish. Set about 45 minutes aside and lets get to work and go shopping

Pot
Pasta Strainer
Skillet
Pan (18x9ish)
1lb Zitti Pasta
Ricotta Cheese (16 oz)
6 slices of Provolone cheese
Parmesan cheese
Spaghetti sauce
3 turkey bratwurst links
Tiny ham cubes
Salt, Pepper, Thyme, Garlic Powder, Onion Powder
Pam Spray
Spoon for mixing
Large Bowl

Boil the pasta until al-dente and while that is going take the skillet on medium heat and throw in the sausage (no skin), ham cubes (about 1/2 cup), and use all the seasoning to taste. While the sausage is cooking you will want to chop it into tiny pieces. Allow this to cook thoroughly then place the contents of the skillet in the large bowl. Next take about 6 tbs of Parmesan cheese and 4 slices of Provolone (torn into tiny pieces) and place that in the large bowl as well. Take 20oz of the red sauce with about 16 oz of the Ricotta cheese and mix it into the bowl with all that other goodness! You past should be done and when it is strain it then place all the pasta into the baking pan(AFTER you spray it with Pam). Pour the sauce onto the top of the zitti and smooth it evenly across the pasta. Now before you put it in the oven grab the last couple slices of Provolone and place slices of it evenly across the top (pictured). Heat the oven to 375deg and allow it to cook for 20-25 minutes but before you serve make sure to let it cool for about 15 minutes. This one should win over all the people in the house, in fact I live with a red sauce hater and she finished her bowl before I could even blow the heat off of my fork.

<div class="separator" style="clear: both; This process is different for everyone but enjoyed by millions. So grab the gool ol' groceries below and we'll get yall' fixed up.

Crock Pot
1/2 LB ground Sirloin
1/3 LB Beef Chunks (for stew)
2 Turkey Bratwurst Links
1/4 LB Dry Kidney Beans
1/4 LB Dry Pinto Beans
Srirachi Sauce
Chili Seasoning
Salt, Pepper, Paprika, Onion Powder, Garlic Powder
1.5 Cups of Tomato sauce
8 oz can of Tomato Paste
Spoon
Pot
Pan
Pasta Strainer

Okay before I continue and before I get an email about NO ONIONS?!?! well I am not a huge fan of onion so I generally replace it with onion powder so lets just move on you will have to trust me. Also as an option you can throw some Jalapenos in the mix to make it even spicier!
Okay first thing is first we need to soak those beans. Fill the crock pot half way with cold water and put the beans in, allow this to soak for 12 HOURS. Yes I said HOURS.
Welcome to the next day, grab those beans and pour them into the strainer and rinse them off (also dump out the water from the crock pot and rinse it out). Now heat up some water in a pot and AFTER it boils slowly add beans so that it keeps boiling. Boil the beans for about 20 minutes then put them in your crock pot.
Set the crock pot to medium heat and move on to the pan and meats. We are going to cook the meats (all at the same time if you want) on medium heat until cooked through. We will also add ALL the spices to the meat at this point EXCEPT the chili seasoning. Make sure to break the sausage and sirloin into bite size pieces. You will have to use best judgments here but its about 1/2 tsp for most of the spices and 1 tbs for onion powder. Once the meat has browned add it to the crock pot, grease and all.
Lets move on to the sauce, pour 1.5 cups of Tomato Sauce into the pot, the whole can of paste, chili seasoning, and a decent squirt of Srirachi sauce (you may also add jalapenos here). Once this is in give it a good stir to mix everything around. At this point feel free to add SMALL amounts of water to get the consistency you want (but good chili isn't soup, it's chili). Allow this to cook on low (with the top on) for about 6-8 hours. Once it is done I recommend chilling it in the fridge for a day then reheating to serve but that is optional. This chili has been voted Greatest Chili in the WORLD by a governing body that does not exist. Enjoy the pictures and the dinner. Ohhhhh and please don't forget the saltines.

Pizza Puffs!!

I have been meaning to make this one for a long time but never came across an occasion to make them. I mean I still have no reason to make them but I needed something for lunch today and decided to whip these up. I got the original recipe from noblepig.com and tweaked it just a bit. The shopping list for tonight

1 egg
All purpose flour
Milk
Baking Soda
4 oz mini pepperoni
4 oz mozzarella shredded cheese
Parmesan Cheese
Pizza Sauce (as needed)
Spoon
Whisk
Measuring Cup
Bowl
Non Stick Muffin Pan (or mini muffin pan)
Garlic Salt
Thyme

First preheat the oven to 375 deg then grab the whisk, spoon, bowl, measuring cup, flour, baking soda. Mix 3/4 cup of flour and a 1/4 TSP of baking soda. Then lightly whisk one egg and measure out 3/4 cup of milk then whisk this into the bowl with the flour and baking soda. Once this is mixed add in a dash of garlic salt, thyme, about 1 cup of mini pepperoni, 1 cup mozzarella cheese, and about 1/4 cup of parmesan cheese into the bowl. Mix this with a spoon then pour it evenly into whichever muffin pan you choose. Fill the cups about 3/4 full and cook until golden brown (20-25 minutes). Heat up the pizza sauce in a bowl and serve the best pizza ever. Simple, fast, and more flavorful than .....well insert a witty analogy here.

Teriyaki Marinated Chicken with Orange Glaze

Have you ever opened the pantry and fridge and just though "what the heck can I put together", well this was one of those days for me and my lady so we put our heads together and came up with this little concoction. The shopping list tonight

All purpose flour
Orange Juice
Granulated Sugar
1 lb boneless/skinless chicken breast
Louisiana Supreme Teriyaki sauce (or your favorite type)
Large zip lock bag
Skillet
Whisk
Baking pan
Measuring spoon/cup

This recipe is pretty easy but will take a good eye and concentration to make the orange sauce. Start by putting the chicken in the bags with about 1 cup of teriyaki sauce and let it marinate for at least 5 hours. Next pre-heat the oven to 400deg and place the chicken (out of the bag) into the pan. Let this cook until white all the way through (about 20-30 minutes). Next (after the chicken has cooked for about 10 minutes) take the whisk, pan, sugar, OJ, flour and measuring spoon. Once you have grabbed all of these heat the pan on medium heat. Pour in 1 1/2 cups of OJ, now slowly add the flour 1 tbs at a time while whisking the mixture. You will probably use about 5 tbs of flour and after you have added the 5 tbs of flour whisk until the mixture has the consistency of cinnamon roll glaze. Take it off the heat as soon as that is achieved and add the 2 tbs of sugar while whisking it in SOFTLY. Once it is whisked in the chicken should be done and you can plate the main course and add the sauce on top and enjoy a fabulous meal for fabulous people. I recommend for a side to heat up green beans in a pan with honey on top until they are cooked well. Enjoy the dinner and the pics!

Chunky Mango Avacado Fish Tacos and Corn

This here dish was a pleasant surprise. I saw something on the food network with a guy who made mango salsa so I took it and did what I do. I didn't catch his recipe but I figure mine is always better. Serves about three The shopping list for this is as follows

Flour Tortillas
1 Mango
1 Avocado
1 Carrot
1/2 cup of Orange Juice
Salt and Pepper
Pan for cooking fish
Jalapenos (pre sliced in a jar)
Water (as needed)
1 lb Tilapia (Fresh)
Knife
Peeler
Blender
Aluminum Foil
2 ears of fresh Corn
Paprika and Seasoning Salt
Butter
Bowl and Spoon
Butter

Whew that was a long list. The corn takes about 20 minutes to cook so I recommend doing it first. Pre heat the oven to 400deg. Peel the husk from the corn and then the silk (little hairs)by rubbing the corn with a wet paper towel or by hand. Once the corn is clean cut 2 pieces of aluminum foil long enough to wrap each ear up tight. Place each ear on the tin foil, then by hand rub each ear down with a generous amount of butter. Sprinkle the paprika and seasoning salt around the corn and the spicier you want it the more sprinkles you will need to make. Wrap this up tight and set it in the oven (in a pan or not) for 15-20 minutes.

Now that the corn is cooking take the mango and cut it how it is depicted below (slice off 4 sides, leaving the center, then score the mango in a cross pattern. After doing this you should be able to just pull off the little squares into a bowl). Place all that mango in the bowl then slice the carrot into thin slices (or if that is to difficult just chop it into little pieces) and add it to the bowl. Next take a few slices of jalapeno (the more you add the spicier the dish) and chop them very fine and add it to the mixture. Next take the avocado and slice it long ways until you hit the "nut" in the middle then cut in a circular motion around it to split the avocado in two halves. Scoop out the "nut" and put the avocado in the blender (after peeling the skin) until it makes a paste (pictured below: you may need to add small amount of water if the avocado is too dry). Add a couple of tbs of this to the bowl and set it aside. Take your fish and place it in the pan for cooking with the 1/2 cup of OJ. Set the oven back down to 375 deg (the corn should be done by now) sprinkle salt and pepper to the top of the fish for flavor and bake it for approx. 12-15 minutes. When the fish is done set it on a plate and cut it into tiny pieces (pictured), heat up the tortillas in the microwave, then finally put the fish inside with the mango salsa and enjoy. This dish is so very tasty and you can even mix it up by cooking the mango salsa in a skillet before serving. I hope you enjoy this dish as much as I enjoyed making it.

<a href="http://2.bp.blogspot.com/_obNdYts3w98/S-tnyGGUD0I/AAAAAAAAARc/kT-AihRcjyo/s1600/100_0476.JPG" imageanchor="1" style="margin-left: 1em; Take the bowl and whisk the egg whites, flour, starch, jalapeno juice, paprika, salt, and pepper until it looks like smooth pancake batter. Slice the chicken into strips and then set it into the batter and coat thoroughly. Take the tong or spoon and set the chicken into the pot PLEASE DO NOT BURN YOUR SELF wait until the outside is crispy golden brown then place on a plate with paper towels to soak the grease up. I highly recommend trying to cook one piece first and if you cut it open and the inside is pink but the outside is golden, turn the heat down a bit before cooking more. Cook some sweet potato fries to make this an awesome and easy dinner for all.

Easy Hasselback Potato

This one is easy and good for a lunch or a side for dinner. This Swedish dish takes its name from Hasselbacken, the Stockholm restaurant where it was first served with much praise. This one is easy but like with all potatoes the cook time is long. Shopping list for easy hasselbacks is

2 large russet potatoes
1 good paring knife
Pan for baking
Bowl
2 tbs butter
Garlic salt
Bread Crumbs
Parmesan Cheese
Olive Oil
Optional :sour cream and chives
Potato Peeler

Preheat the oven to 425deg first off, then get the two russet potatoes and peel them(some people soak them in an 'ice bath', a mixture of ice and water, but for this its not necessary). Next we will need to do some knife work on the russets. I cut the ends of the potato off and then (with the potato standing on the flat end) slice the length of the potato to make a flat bottom. Once you have this flat bottom and flat ends on the potato, take your knife and cut slices into the potato about 3/4 deep and about 1/4 inch wide (see pic). Now place the two russets into the pan and LIGHTLY drizzle the olive oil on the top, 1 tbs butter for each potato and a dash of garlic salt on each. Let this bake for 50 minutes. While it is baking take a small bowl and mix 1tbs bread crumbs and 1tbs Parmesan cheese, after 50 minutes take the potatoes out and sprinkle this mixture onto the top then bake for 10 more minutes. That's it. Now feel free to add the sour cream and chives if you want and enjoy the pics from my crappy camera (I promise one day I'll get a good one).

Double fried CAT FISH!

Okay lets not even pretend fried catfish isn't the best ever. I'm done talking, in fact, lets get our shopping list up:

Fresh Filleted Cat Fish (about 1lb or whatever you fancy)
Vegetable Oil (about 6 cups or so)
Cat Fish Fry Powder (about 5 oz)
Paprika
Cooking Thermometer
Pot
Bowl
Slotted Spoon
Large Zip Lock Bag
Plate with napkins (to soak up the excess oil)

PLEASE PLEASE be VERY careful when working with oil. Set you burner to the hottest setting and heat the oil to 365 deg. While that is heating up grab the bowl and put about 2 oz of the powder in there. Then take the cat fish and cut it into long pieces (like in the pic below). Rinse them with cold water and then coat them in the powder from the bowl and a dash of paprika. Place the fish in the oil, using the slotted spoon to set the fish in there, cook until it is golden brown (or read the package of the powder and follow directions). While this is cooking grab the large zip lock bag and fill it with about 3 oz of the powder. When the fish is golden brown scoop the pieces out and put them into the bag. Zip the bag up and shake well so that all the fish is covered again in the powder. Set the pieces back into the oil for about 1-2 minutes (or until the fresh powder is golden brown). Scoop the fish back out and set on the plate with napkins to soak up the grease. While these cool heat up those fresh veggies for a side, put some tartar sauce down and prepare to be in fish heaven. Pictures are pretty so here ya go.

Best Egg Sammich EVER.

Okay, okay I hear you all yelling at me now for taking so long. I started a new job and that has been my main focus for a couple weeks. But I am back with this super tasty egg sandwich. I can't take full credit for this as I got the original recipe from a picture my friend sent to me. Then I just made it and it was ohhh so good.
The shopping list for tonight:

Bread (2 slices)
Egg (2 large)
Turkey (few slices of sandwich turkey)
Butter
Cheese (1 slice of monster or whatever you have)
Pan with cover
Knife

The first thing we do is put the pan on the stove top and set it to low-medium heat (on a 1-10 scale put it on 3/4). Now take the bread and make a hole in the middle (like in the picture) of each slice, then butter each piece. Now place the butter side down in the pan and crack the egg into the hole in the bread (DO NOT break the yolk). Cover the pan and allow this to cook until the egg is done(the white is all cooked and yolk is firm), then take the cheese and turkey and put it on top of the egg. Add the final piece of bread and crack the second egg into the hole (do not flip it yet), re-cover the pan and allow it to cook the egg all the way through(egg white is cooked and the yolk is firm). Flip the sandwich over and brown the other piece of bread, put on a plate and enjoy. Its super tasty and super easy. I hope you enjoy this as much as I did here are pics.

Turkey Meatballs with baked Pasta. SUPER TASTY GOOD

Okay I know I always write a little blurb here that most of you skip over. For those that don't skim my witty rapport I would like to thank you all for the support of my small blog. I started doing this as a fun project and it hasn't lost its zeal yet. I make these foods with common stuff you find around the house or in basically any grocery store. I read other blogs and am amazed at the things they make and claim it to be for the average cook. I have a degree in this stuff and some of the things I see out there are difficult even for me let alone the common man (or woman) that has a regular kitchen and supplies. If you ever have any suggestion please feel free to leave them here, but for now lets get on to this super tasty dinner that can feed 4-6 (depending how hungry you are!). The shopping list for tonight

Ground Turkey (about 1.2 lbs)
Panko bread crumbs (or similar brand)
Shredded Mexican cheese (or whatever type you prefer)
Salt
Grated Parmesan Cheese
26 oz can of your favorite red pasta sauce (I used Hunts 3 Cheese)
14 oz Farfalle Pasta
Pot for boiling pasta
Baking pan (about 13in by 9in)
Bowl
Spatula
Fresh Spinach Leaves (1.5-2 cups rough chopped)

Tonight is an excellent and healthy meal for you and the family. Pre-heat that oven to 375 then grab the bowl, bread crumbs(about 1 cup), salt(2 tsp), Parmesan Cheese(about 1/2 cup), and shredded cheese(about 1 cup). Mix this by hand in the bowl then grab the ground turkey. Take enough for one meat ball (but don't roll it up yet) and coat it in the mixture, then roll it up into a meat ball a little bigger than a golf ball. Continue this until you have used all the turkey adding more bread crumbs, cheese etc. into the bowl as needed. Place the turkey balls into the pan and place into the oven, allowing it to cook for 20 minutes. While this is cooking put enough water into the pot for boiling the large amount of pasta(if your pot is too little do it in two batches). About this time the turkey meat balls should be done, take them out of the oven but leave them in the pan. Strain the pasta and pour it into the pan with the meat balls. Now leave that for a minute and go chop the fresh spinach leaves, about one-two cups (rough chop) and add them to the pan, as well as your pasta sauce. Mix this all with a spatula but be careful to not spill it then sprinkle a layer of the shredded cheese across the top and bake (at 375) for 15 minutes. That's it you are done and the hungry people in your life will thank you and demand you make this again. Pics for reference.

<link rel='alternate' type='text/html' href='http://alwaystastyneverstale.blogspot.com/2010/04/turkey-meatballs-with-baked-pasta-super.html' title='Turkey Meatballs with baked Pasta. There is a few more prep items than normal but trust me this one is easy and one of the best; serves two people. Shopping list for tonight

Veg. Oil
Salt, white pepper, Italian Seasoning, Pepprika, Onion Powder
Panko Bread Crumbs (or similar brand)
2 egg whites
Flour
3 bowls
Pan for baking
Skillet
Spatula
Pork Cube Steak (about .7lbs split into two patties)
Cheese (2 provolone slices preferred or whatever you like)
Spaghetti Sauce (I used Prego roasted red pepper and garlic, about 1 cup)

Lets get our cook on. Pre-heat your oven to 400deg. Next take the three bowls and put flour in one (about 2 cups), in the next bowl put the egg whites, in the third bowl mix all the spices and about 1.5 cups of panko bread crumbs (or similar brand). Use your best judgment on the spices. Now take the veg. oil and the pan. Pour enough veg oil in the pan so that it covers the bottom. Heat this on medium heat. While the oil is getting hot dip the steak in the egg whites first, next the flour, then the bread crumb mixture then DO THIS ONE MORE TIME. Place the steak in the hot oil (BE VERY VERY CAREFUL NOT TO BURN YOURSELF WITH THE OIL) and let it BROWN on one side then flip it over and BROWN the other side. Once each side is brown place it in the pan for baking. Now go back and do the same thing for the second steak if you need more flour or breadcrumbs feel free to add more to the bowl. Once they are both in the baking pan take the cheese you chose and place it on top of each steak (for reference I used Mexican shredded, because I was out of provolone). Place in the oven for 20 minutes when it is done pull it out and put a small amount of red spaghetti sauce on it (about 1/2 cup each). If you want feel free to add the spaghetti sauce with about 5 minutes of cook time left to get it hot. Now I am not exaggerating when I say this one of my favorites as always pics for reference.

Fajitas,,, Spicy Spicy Fajitas.

Seeing as how I am here in the Lone Star State I figured I should do a Texas staple, Fajitas! I love fajitas and I love some spicyness in my food, not even this storm outside can bring my spirits down. So tonight, feeling a little creative, I took the best of both and made this delicious, stupendous, magnanimous tasty dinner. Prep on this one is easy and cook time is about 10 minutes and feeds 2. Shopping list tonight

1 lb chicken breast (boneless, skinless)
Salt, Pepper, Onion Powder, Garlic Salt, Lime Juice, Sriracha Hot Chilli Sauce
Bell Peppers (yellow, red, orange 1 each)
Cheese
Sour Cream
Re-fried Beans
Tortillas
Pan, Knife, and Spatula

Okay all these knife skills I have been secretly making you learn are going to come in handy tonight. Take the chicken breast and slice it into about 2 inch long and 1/2 inch wide strips(or as close as you can get it). Once the chx (chicken) is good to go take all three peppers and cut them this way: cut off the top (pictured) then slice off the sides (pictured), throw away the core and the top. Once you have the sides of the peppers off, cut them into about 1 inch long and 1/4 inch wide strips and put the chicken and peppers into the pan. Now go ahead and turn the stove up to med-high heat and let the chicken and peppers start to cook while that is going on grab the spices and lime juice and season to taste. The sriracha sauce(pictured) is pretty spicy so dont go crazy but don't be a wimp about it, as far as the lime juice is concerned be generous as well because we are not marinating it in the juice so a lot of the flavor will cook away. Once the chicken is cooked all the way through (remembering to mix occasionally) throw it on the tortilla (peppers and all) add your condiments (sour cream and cheese) and taste some of Tejas. I hope you enjoy this as much as we did today, the girly friend exclaimed "you better be making this again and putting it on the blog" so it clearly has the seal of approval tonight. Pictures are always awesome, and check out that storm!

<a href="http://4.bp.blogspot.com/_obNdYts3w98/S6qpdqxRHII/AAAAAAAAALI/BCEG9s-Q84M/s1600/100_0357.JPG" imageanchor="1" style="margin-left: 1em; Oil
Water
3 egg whites
1 large bowl
4 Small bows
Food coloring of you choice (4 colors)
Whisk/mixer
4 Spoons
Frosting!!! (I used Betty Crocker Rich and Creamy Rainbow Chip)
Cup Cake Pan (makes 12-18)
Tooth pick (optional)

Okay like I said feel free to make this a group event it's more fun than you think to make these. Preheat your oven to 325 deg. Take the cake batter, 3 egg whites, 1 1/4 cup of water, 1/3 cup of veg. oil and whisk this in a large bowl until smooth. Now separate it as evenly as possible into the 4 smaller bowls. Take the food coloring and put a bit in each small bowl (one color for bowl). Now don't mix up the spoons and cause the colors to mix (unless that's you thing who am I to judge?) but stir up each color making to get all the white parts, and feel free to add as much color as you desire! Now take the cup cake pan and LIGHTLY grease the bottom with the veg oil. Once this is good to go take and spoon in the colors in various orders making sure to just layer them in the pan NOT mix them. Once you have the cup cake slots 3/4 full put it in the oven for about 20 minutes. Make sure to check the doneness with a tooth pick or something similar, it should come out clean (free of batter) if it does they are done. Let them cool for 15 minutes before you take them out of the pan then enjoy the fun in decorating them! Bon-appetit and now I'm going to work out to get rid of all the goodness I just inhaled. And pics as always.

Super Twice Baked Mashed Potatoes With BACON!!!!

Yes the BACON needs to be capitalized because you know what, I love it, almost as much as my READERS(see you guys get italicized too). Okay this is easy but we know potatoes can be kind of a jerk and take FOREVER to cook. I recommend to start cooking, then go build a house and come back to eat. Our shopping list for this one today

2 large potatoes
Bacon about 3 slices (or as much as you want it's BACON after all)[or for you out there that *gasp* don't like the swine bacon bits will do]
Shredded Cheese of choice
Milk 1/2 cup twice (so one cup you masters of math)
Sour Cream
Optional: Chives finely sliced.
Salt
Pan for baking
Spoon and fork and knife
Large bowl
4 tbs butter

Okay this one is easy but takes patience so call on your inner Buddha and lets begin. First do the right thing and bake your bacon pieces as I have instructed in older blogs (refer to them below for how to do this).

Next pre-heat that work horse we call an oven to 400deg. Take the potatoes and lightly coat them in vegetable oil (and I do mean LIGHTLY) then put them in the pan, poke some holes in them with a fork, and let them cook for 1hr-1:15. Yes seriously that long. The insides should be soft when done. But before you cut them open let them COOL..This is Critical.(I show you in the pics what happens when you don't let one cool) Let them cool for 15 minutes. Next take a knife and cut the potatoes long ways all the way through so you have 4 halves. Next take the spoon and scoop out all the potato and put it into a bowl, making sure not to let the skin break or collapse. Once you have this all done mix in the cup of milk, butter, 1 tbs salt, chives, and cheese. Now that BACON you cooked earlier, take it and chop it into tiny pieces and add it to that mixture. Mix it well so that it becomes mashed potatoes. Spoon the mashed potatoes back into the skin shells and bake for another 15 minutes like this. Take them out add sour cream and enjoy. Potatoes are a jerk so teach them a lesson by eating them in the most delicious way ever.

OKAY this is what happens when you DON'T let it cool. Today I have 2 blogs for you, this one and the one above it. Lets us begin with a new one my lady suggested for dinner. She found some recipe online and it sucked so I made it what it should have been. Serves 2-4. Shopping list for today

Pot for pasta
Pan for cooking chicken
Salt, pepper, lemon juice, onion powder, garlic salt
1 regular sized chicken breast (about 1lb)
Can of Cream of Mushroom Soup (10.75 oz)
1/2 lb Spaghetti
Mexican Shredded Cheese

Okay folks lets get our cook on today First pre-heat the oven to 400deg. While this is heating take the pot for pasta, the pasta, and a tbs of salt. Boil the water and add the pasta making sure to cook until al-dente. Now slice the chicken breast into small chunks. Put the chicken into the pan and season to taste(using salt, pepper, lemon juice, onion powder, garlic salt). Cook the chicken on medium heat until cooked all the way through.
The pasta should be done at this point, if not hurry up. No seriously take the al-dente pasta and put it into the pan with the cooked chicken(not on the heat), add the mushroom soup cream and mix it well so that it is evenly distributed. Spread the mixture evenly across the pan. Next take the cheese and cover the top of the pasta evenly. Bake this in the oven for about 15 minutes or untill the cheese bubbles. This stuff is awesome and I recommend cooking some garlic bread to go with it. You can thank me later but be cool I blush easily.

<a href="http://2.bp.blogspot.com/_obNdYts3w98/S6gWp-HI1qI/AAAAAAAAAIQ/3RyjvaicMZ0/s1600-h/100_0334.JPG" imageanchor="1" style="margin-left: 1em; This one has a long cook time but it's easy to put together and cooking for 1-2hrs has been shown (in soups) to bring out more nutrients. Cook time is 1hr and here is the shopping list for today.

1 can corn (or fresh but just the kernals) 1 cup
1 can black eyed peas (or fresh) 1 cup
1 carrot fresh(large size, small slices)
1 15oz can Del-Monte(or similar brand) whole white potatoes
2 tbs butter
Onion (about half cup small rough chop)
1/2 cup white rice
Veg Oil (3 tbs)
1 stalk of celery fresh (small rough chop)
Water 4 cups
Chicken Bouillon Cubes (I used 4 but make sure to check the bouillon package)
Small Shrimp (fresh if possible) about 20 pieces
Pot with top
Spoon for stirring
Various spices (Onion powder, Seasoned Salt, Black Pepper, Salt)

There are a few more ingredients in this one but its ohh so good. First take the water and boil it then add the bouillon cubes. While the water is boiling heat up a pan with the veg oil, butter, and put in the onions to 'caramelize' them(they should turn light brown and be moist) then put the rice in the pan. DO NOT let the rice brown just let it cook for a bit while mixing it to coat the rice in oil. Once this is done take the contents of the pan and put them in the pot(after the bouillon cubes have been added) and turn the heat down to just a simmer. For example my stove goes to 9 and I had it on 2. Feel free to add all the rest of the veggies, also add the spices at this point and season to taste(I recommend light salt, good amount of pepper, couple shakes of onion powder and season salt). Add the shrimp (with no skin or tails) now as well, then PUT THE TOP ON the pot. At about 40 minutes add the potatoes(after straining the water out) and let it continue cooking for another 20 minutes. You can let it cook a little longer if you desire but this is the optimum time to stop the cooking procedure. Now take a bowl in to your sickly person then enjoy a bowl for yourself because global warming means its cold outside in Texas and I need to warm my soul. Now pics for reference and because it looks so good.

Almond Walnut White Chocolate Chip Home Made cookies.

Who the hell doesn't love a good cookie? Cookies are the staple of many sweet tooth eaters out there.. Stop wasting money on store bought and impress everyone with these tasty tasty creations. Shopping list for today.

2 1/3 cups of flour
2 large eggs (I use natural farm fresh)
2 1/2 sticks of butter
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
1 cup granulated sugar
1 cup of brown sugar
1 to 2 cups of Nestle white chocolate chip morsels(I use two because I'm a sucker for them)
1/2 cup of sliced almonds
1/2 cup chopped walnuts
Large bowl
Cookie Sheet
Whisk or Mixer

Alright lets get this delicious show on the road. Pre-heat the oven to 375 deg. Take the large bowl and add in the flour, butter, baking soda, salt, both sugars, the walnuts, almonds, vanilla extract, BUT NOT the chocolate chips OR EGGS. Now either whisk this until smooth or use a mixer. While this is mixing (or whisking) add ONE egg at a time, once the egg has been mixed add the second one. Now add the chocolate chips and let it mix just a little bit longer so they are evenly distributed. Once the mixture is smooth take a spoon and make little balls about the size of a golf ball and place them on the tray with some space in between each one. Place in the oven and cook for 6-10 minutes. DO NOT take them off the tray right away, let them cool down so they firm up and serve and enjoy. I know the kids will thank you and you will thank yourself. Now tasty pics for reference. Also I apologize that I am a cook and not a photographer, also I blame the camera.

Home Made Sauce and Pasta

Okay now that we have mastered the art of opening a can of someones sauce, lets make our own tonight and be a little creative. This one is like making your own cheese sauce down there in that it may seem a bit intimidating but its easy as making your own sauce. Shopping list for today

1 6oz can of Hunts(or similar brand) Tomato Paste
1 15oz can of diced/chopped tomato's
Various spices (onion powder, Italian seasoning, paprika, salt, white pepper, lemon juice, garlic salt)
1 pot
1 pan
Pasta Strainer
Whisk or spatula
Tri colored pasta (enough for 3 people)
Water (as needed)
OPTIONAL ADD-ON: Beef seasoned to taste and cooked, shrimp, or veggies boiled to add to the pasta and sauce. I'll leave this part up to you today, for reference I chose Jumbo Shrimp.

Go ahead and take the pasta and put it in boiling pot with a tbs of salt mixed into the water. While this is cooking lets make that sauce(and the optional add-on if you have one). Take the sauce pan and put the whole can of diced tomatoes into it on medium heat. Next take the tomato paste and whisk it into the pan with the chunks of tomato's. One this has a nice consistency you can add a small amount of water as needed. I used about 1/4 of a cup (this can vary depending on how much water was in your jar of tomato's). It should have the consistency of Marinara sauce. Next take all of your spices and season to preferred taste but what I recommend is about 5 tbs of paprika, 2 tbs of white pepper, 3 tbs of salt, 5 tbs of Italian seasoning, about 3 tbs of lemon juice, and 3 tbs of garlic salt. PLEASE add as much or as little as you wish to get the desired taste. Now let this simmer and feel free to add your (already cooked) add-on. Check on your pasta and let me know when it's done.

Okay the pasta is al-dente, so take it and strain the pasta in the sink. Take the strained pasta and add it to the simmering sauce. Mix this up so that all the pasta is covered in the sauce and let it cook for about 2 minutes this way, occasionally stirring. After about 2 minutes go ahead and get your bowl and fork and revel in the awesome that is you. Hope you enjoy and as always pictures below for reference.

Uber Pork with pork goodness and a side of awesome.

Okay....the title can't even capture how good this recipe is...It's so simple even...Well, I, can make it. It's no secret here at my blog that I love pork (insert joke here) and given that it always seems to be on sale at the store I can't pass it up. For proper marinade you need at least 6 hours up to 24. Tonight what you will need is

Cinnamon about 2tbs
Salt
Regular white sugar about 1/2 cup + 3tbs(roughly)
Pork Tenderloin (unseasoned) 1lb
Green Apple - 1
Small Bag of Ocean Spray Craisins (or another brand if need be)
Water
13x9 pan
Knife

Looks easy right? Well that's because it is! If you can marinate this pork for at least 6 hours up to 24 hours it will make it much better, but if you are pressed for time marinate as long as possible. Make sure the pork is thawed in the fridge(usually takes about 24hrs if it was frozen). Take the pork and set it in the pan (don't hurt yourself here, it's dangerous). Take your knife and cut the whole length of it along the top about half deep into the pork(pictured). Now taking the knife cut a slit length wise down one side of the pork but only about 1/3 the way deep(as seen in the last picture). This is where you are going to marinate the loin, mix 1/2 cup of sugar and 2tbs of cinnamon with 2 cups of water. Stir this up and pour it into the pan and on top of the loin. Cover it and let it marinate. It's okay I'll wait.

You back? Good. Preheat your over to 400deg. and make sure to leave all the liquid in the pan.
Now take about 3 tbs of sugar and rub it on the pork, and spread about 1tbs of salt across the loin, once you have done this take your apple and slice it into little cubes and some craisins(as many as you want without over flowing the pork), then stuff the open parts of the pork(including the side cut, also pictured). Once you have done this, pop that bad boy into the over for about 18-26 minutes (or until the internal temperature is about 160) remembering to spoon the water in the pan onto the top of the pork generously every few minutes. Take it out, cut it into slice, and serve. This is one of my favorite all time meals and now it can be yours as well. Enjoy!

Bacon and Cheese burgers with more bacon and cheese..In a skillet.

Okay almost everyone knows how to make a burger...But not good. So lets give mine a try on the skillet and stove then you can move onto the grill if you want. Seeing as how my apartment doesn't allow grills I had to learn to fend for myself on the stove top. This will serve 2.

What you will need

About 1/2lb lean hamburger meat (I prefer 93 -7 organic)
About 5 slices of bacon (you can use as much as you wish but this amount will satisfy all bacon lovers)
Baking sheet
Skillet big enough for cooking 2 burgers at once (or one at a time if you want)
Spatula
Mixing bowl
Shredded Colby jack cheese
2 slices of good brand Colby jack
Hamburger buns (I forgot to pick some up so I had to use wheat bread, sad sad Ben )
Panko bread crumbs (optional)
Condiments- mustard, mayo, pickles, ketchup, lettuce etc.)
A couple paper towels
And a good Beer (I went with Boulevard Wheat with fresh orange slices)

Okay skillet burgers make grill masters wince with agony, but when you don't have the time(or the availability of a grill like me), space, or skills for the grills you have to do whats best and I bet even the most carnivorous of friends won't be able to tell the difference. Take the baking sheet and place all 5 sheets of bacon on it, with the oven pre-heated to 400deg let 3 pieces of bacon cook for 20 min and take 2 pieces out at 15 minutes. Take the 2 pieces you took out early and chop it into tiny pieces (pictured). Next take the hamburger meat, about 4 tbs of shredded colby cheese, 2 tbs of Panko bread crumbs (optional), and the pieces of bacon you just chopped. Mix the ingredients mentioned above by hand in the large bowl. Next form 2 hamburger patties to desired thickness (I recommend about 1 and 1/2 inch thick each). Put the skillet on the grill on low-med heat. My range on my stove is 1-9 and I had it on 3.5 to give you an idea.
Now this is the part people seem to think they are good at, but this can make or break your burger. Place the meat on the skillet on the temp listed above and let it sit there. DO NOT mess with it or keep flipping it around, once it is cooked halfway through (as seen by looking at the side) or the blood rises to the top(whichever is first) take it and flip it once! While the other side is cooking take the colby jack SLICES and place them on top of the burger. Cook to desired done-ness (well, medium, rare etc.) Take the meat and set it on a few paper towels to soak up excess grease (about 30 seconds should suffice) then put it on the buns with your condiments and come back here to thank me! Now for glorious pictures taken with a cheap digi cam!

Grilled Cheese and Butter Syrup

"Behind every great man is a great woman." Well I'm not a great man but I got a great woman and she eats her regular grilled cheese with syrup on the side so I took it and added a little to it to get one of the best grilled cheese sandwich's ever. This is an easy lunch or snack that you can make in just a couple of minutes. I will have another blog for you later today hopefully this will get your stomach by.

What you will need

1 frying pan
1 spatula
2 slices of bread (I prefer wheat)
butter
pepperoni slices (about 6-9 or you may substitute turkey, ham, or any other meat that you like but pepperoni is the best)
Syrup (either maple or butter)
1 slice of American cheese (or any kind that you like)

This one is so simple but is ohhhhh so good. Put the pan on the stove top with medium heat. Take ONE slice of the bread and butter it, then place it butter side down in the pan. Next take the pepperoni (or whatever meat you chose) and place it across the bread in the pan(pictured). Grab the cheese and place it over the meat. Take the other piece of bread and put the syrup on the bread, the trick here is to use not too much but not too little (pictured). Once you place the bread with syrup face down onto the cheese, butter the top of the bread. Cook until both sides are golden brown and enjoy the best grilled cheese ever.

Garlic Butter Shrimp and Awesomeness in a bowl

I'm a big fan of pasta as you can tell by my lowly blog here, and today were going to make a VERY simple favorite of mine. Garlic and butter shrimp with Alfredo sauce and pasta. Serves 2-3

What you will need.
1/2 to 1 lb of fresh or frozen shrimp (If frozen make sure to thaw it before hand)
3 cloves of fresh garlic (the little part of garlic in the plant)
Fettuccine Pasta enough for 2-3 people
Alfredo Sauce of your choice
Salt
1-1/2 sticks of butter
Pan for cooking shrimp
Pot for boiling pasta
Knife (or garlic press) and Stirring Spoon
Strainer

Let's get this classic started, take the pasta and fan it out in the pot of boiling water with a tbs of salt mixed in(pictured). Now for the fun part, take the shrimp (make sure it has no tail or skin, if it does pull them off) and put the shrimp in a pan on medium heat. Right after you put the shrimp in place the butter in and let it melt. Be sure to occasionally stir the ingredients so as not to let it burn. Next take the garlic cloves and chop them (or press if you have one) into small pieces(To get the skin off the cloves take the knife flatly and place it on top of the garlic on the counter and smash down with your hand to break the skin off be careful not to cut yourself). Place the garlic in the simmering butter and shrimp remembering to stir the pasta and the shrimp
occasionally. Try a piece of shrimp when you think it is done (about 10 minutes) to see if it is to your liking. Once the pasta is "al-dente" strain it and put it back in the pot. Now take out all the shrimp and place it in the pasta. Once you have done that use the strainer to pour the butter/garlic mixture over the pasta making sure to catch the bits of garlic(if you like the garlic you can dump it into the pasta but I do not prefer the texture). Add in the sauce and stir. That's it. Easy as ....well....pasta and shrimp. This classic with a little twist will make you a hit with the family for sure. I would add some garlic bread as a side to pair with this dish, but that's just my taste.

Burrito Pie

That is not a typo. It's burrito pie. This one is easy, fast, and tastes great. There may seem to be a lot of ingredients but its very easy and fast I promise.

What you will need
2 skillets - one for the tortilla and one for cooking meat(pictured)
1lb Beef (feel free to substitute steak or chicken)
Seasoning (Taco bell seasoning if you like instead)- salt, pepper, cayenne pepper, garlic salt
1 can re-fried beans
2 Large flour tortillas
3 cheese blend
Sour Cream
Lettuce
Tomato

First preheat the oven to 400 deg. While that is heating take the beef and put it into a pan and season it to how you like(or add the taco bell seasoning). Make sure to mash up the beef into small bits like you would find on a burrito. While that is cooking on the stove take a large tortilla and set it on the other skillet (It should fit in there without going up the sides of the skillet, pictured below). Next take the re-fried beans and spread about 1/2 the can evenly on the tortilla. Once it is spread take another tortilla and put it on top of the beans and spread the last half of the beans on the top tortilla. Now you should have tortilla, beans, tortilla, beans in a pie like form. Next take the seasoned (thoroughly cooked) meat and spread it evenly on top of the beans(pictured). Once that is done, take the 3 cheese blend and sprinkle as much or as little as you like. Take the "pie" and put it into the oven for about 10 minutes(or until the cheese is all melted and the tortilla is a little firm). Take it from the oven and slice it into even "pie" slices and serve. Feel free at this point to add sour cream, tomatoes, lettuce, or any other things you prefer to the top. This is an easy and tasty dish that the whole family can help make and can be done in about 15-20 minutes.

Tasty Pork Chops With Orange and Prune Sauce

This will be the best pork chops you have ever had and you can tell everyone you made it all on your own(with a little inspiration from this blog of course). Serves 3.

What you will need
Paprika, salt, pepper- to season the pork chop
Pork Chops- 3 pork chops about 1.5 lb total
Orange Juice- 1 cup
Orange- One regular orange unpeeled
Sugar- 2 tbs
Water- as needed
Flour- as needed
Prunes(pitted)- about 4-6 moist prunes in a can
2 sauce pans non-stick and a lid- one large enough to hold all 3 pork chops
Sifter- for sifting the flour if you have one
Cheese grater- to grate the orange lightly

Okay on to the cooking. First set your heat about half way on the burner and brown the top and bottom of each pork chop. Add the spices you wish (paprika, salt, pepper) to the top of the pork chop. Next mix the sugar and the orange juice and pour it in the skillet with the pork chops (pictured). Bring this to a simmer (NOT a boil) and cover the pan. Let this cook for about 16-22 minutes (either to 160 deg internal temp or until the middle is thoroughly cooked). I personally like to open the pan every couple of minutes and spoon the orange juice onto the top of the pork chops (I also take a fork and poke a few holes in the pork chop to allow the juices to really moisten it up). While this is cooking feel free to make the side dishes such as fresh veggies and potatoes or whatever you prefer. Once the chops are done cooking take the pork and place it into the other pan(you can warm this pan on VERY low heat to keep the pork warm), next take the prunes and cut them up into little pieces. With the orange juice still cooking mix in the prunes and a little bit of water (maybe 3tbs or so), now mix the juice and prunes in the pan, once the prunes begin to be extremely soft add a little flour(preferably sifted so it wont clump) and a little water (about 2tbs at a time of each) until you get the consistency you desire. You are wanting it have the consistency of marinara sauce. Once you have that consistency add the sauce to the pork chops on a plate, then take the whole orange with the grater and LIGHTLY grate the PEEL of the orange onto the top of the pork(about 1 tsp worth for each pork chop), add the sides you made earlier and prepare for the best pork chops you have ever had!

Publish Post

Baked Mac and Cheese

Okay, Okay, I know I have a few pasta dishes in a row. This was not intended but it happened. My next few will be pasta free to even out the stomach. But for now enjoy this mac and cheese real style.

This is easier than it seems just use your instinct when cooking.

What you will need:
1 bag of elbow macaroni
3/4 lb of desired cheese slices from the deli not pre-packaged (either sharp cheddar or swiss)
6x6 deep pan or just a smaller rectangle deep pan for baking the macaroni
All purpose flower
Milk
Pot for pasta
Sauce Pan
Whisk or something to mix the cheese sauce
Crackers (about on sleeve of saltines)
Large Bowl for mixing the sauce and pasta

Start to boil the macaroni with about 1tbs of salt added to the water untill it is al-dente. Also preheat the oven to about 375.
Now you are going to make your very own sauce today, do not be scared its easier than it seems. Pour about 3/4 cup of milk into the sauce pan on medium heat, 3 tbs of flour and add the cheese slowly as it melts while stiring. If it is looking to thick add small amounts of milk as the cheese melts and if it looks to thin or watery and tps of flour(one at a time) until it starts to have the correct consistency. REMEMBER to add the cheese slowly and let it melt while making sure the consistency is somewhere near the consistency of pudding.
Once all the cheese is melted and is the correct consistency take it off the heat.
Take the al-dente macaroni and pour it into the large bowl along with the cheese sauce. Mix this thoroughly and place it into the deep pan. Once it is in the pan take the crackers and crush them by hand across the top of the macaroni and cheese. Cover the top lightly with crackers and bake for about 15-20 minutes. Take it out of the oven and serve. This will be a dish everyone will love and you will be amazed how much better it is than the blue box stuff. And do not forget the better the cheese the better the sauce. Feel free to try different kinds of cheese to get different taste to keep this dish fresh.

Sorry for the lack of pictures on this meal, some of the pictures were corrupted on my camera.

Pasketti and Meatballs

Everyone loves this Italian classic. So next time you have Tony Soprano and the gang over be assured this meal will win over the whole "family". Serves 3 people or 2 really hungry people.

You will need:
Hamburger Meat about .75 lbs
Spaghetti about .33 lbs
Spaghetti Sauce about 12oz (I recommend Mezzetta Fire Roasted Marinara)
Garlic Bread as much as you want
Vegetable Oil
Provolone Cheese about 1-2 slices
Italian Seasoning
Salt
Pepper
Egg about 1 regular
Bread/Cracker Crumbs (about 5 saltines or 3 tbs of breadcrumbs, whichever you prefer or have on hand, I use crushed saltines)
Cake Pan (2 if possible if not 1 will work)
Pot for pasta
Bowl

Start by LIGHTLY oiling the bottom of a shallow cake pan and set it to the side.
Pre-heat your oven to 375. While the oven is preheating place the meat, bread/cracker crumbs, and one cracked egg into a bowl. Then add a dash of salt, some pepper, and a good amount of Italian seasoning(about 1 tbs). LIGHTLY mix the ingredients either by hand or with a spoon, DO NOT over mix and when done ball into 4-6 evenly sized balls. Place the meatballs into the oiled pan then take out that cheese. Cut the cheeze into smaller pieces so that you can set them on top of each meatball. After placing the cheese on top of the meatballs place in oven for about 15-25 minutes or untill cooked to desired wellness. You may also set your garlic bread on a seperate pan and start cooking it untill it is done. Now take the pot and fill it with water, then set the pasta inside with a tbs of salt (be sure to fan the pasta out around the pot). Once the pasta is al-dente you can strain it and then add your sauce. Now take the pasta place it into bowls, set the meatballs on top, garlic bread on the side and try not to offend any of the big guys with guns at the table.

I would also suggest pairing this dinner with a nice Cabrenet Savuginon of your liking.

Lemon Chicken and Pasta classic goodness.

Today I will be making pasta with lemon chicken. My food is made (as always) with regular household ingredients that anyone can make.
You will need:
1 Pot for pasta
1 Skillet for chicken
1 Lemon
1 Jar of Prego 3 cheese red sauce
Salt, pepper, Italian seasoning, Fresh Lemon, Boneless skinless chicken breast, Penne Pasta, Veg. Oil
First pre-heat the overn to 375 then take boneless skinless chicken breast and LIGHTLY coat it with oil. Next take all of the spices and season the chicken. I prefer a little heavy on the salt, light pepper, a dash of Italian seasoning, and a squeeze of fresh lemon (watch the seeds).
Next place the chicken in the oven and let it cook for roughly 20-30 min. or untill the inside is white.
Now put your pasta in the pot with 1 tbs of salt. Start to boil the water and cook the pasta untill it as "al dente" or to the tooth, which means that you eat a piece and if its right its done (basically).

Now take the chicken and slice it how you prefer. I prefer chunks of chicken opposed to slices but either is fine. Slice the chicken and put it in the drained pasta. Add your sauce and give 2 good squeezes of lemon(watch the seeds). Mix, plate and enjoy.
This is an easy recipe that I'm sure all can make and enjoy.
